Gordon Ramsey’s one of the world’s most renowned chefs and restaurateurs. Learning his recipes and techniques can turn a normal meal into a taste explosion (not to mention make you the envy of all of your friends and family).
In this video, Gordon demonstrates his Crispy Salmon recipe with a side of crab potatoes. It’s quite easy and looks so good.
Here’s what you’ll need: a small frying pan, olive oil, 5-7 small new potatoes, several thin onions, crab meat (1/2-1lb depending upon how much you want to make), nice piece of salmon, mixture of salt, tomatoes (5-20 small tomatoes depending upon how much you want to make).
Preparation
For the Potato Side Dish:
Boil the potatoes, let cool (put in the refrigerator) and peel.
Put olive oil in a pan, heat on the stove, and place the peeled potatoes inside (this is done to take the chill out of the potatoes).
Once warm, take the pan off of the stove and gently crush the potatoes with the backside of a fork and allow them to soak up all of the olive oil.
Add the crab meat, chopped onions, a little salt and pepper, and mix everything together.
Gently pour a little Vinaigrette on top (Vinaigrette can be made from: olive oil, water, lemon juice, salt and pepper)
For the Salmon:
Get piece of salmon (with skin on) and roll it up (so it’s like a rolled tee-pee with the skin side on top)
Cut small slices (1/2 inch or so) into the salmon, sprinkle salt inside slice areas (or other spices that you like), and pour olive oil over the top.
Put olive oil in pan and let heat (until sizzling)
Place salmon in pan skin side on bottom and push down with your fingers (for even cooking)
Add a pinch of salt to season the top and let sit
Watch the salmon (it’ll be done as the color changes and flip over when cooked about 2/3 of the way up)
Let cook for a ½ minute or so after flipping
Flip once more (skin side on bottom) and take pan off of the heat (it’ll keep the salmon nice and crispy)
For the Tomatoes:
Cut your tomatoes in half, put whatever seasoning you like on them (olive oil, garlic, etc…), and put them in the oven
Oven temperature should be just warming them (@ 225-250 degrees)
Gordon Ramsey leaves his tomatoes in overnight but I’d recommend just warming for @ 20-30 minutes as you prepare your dish
Plating
Place a nice serving of the potato mixture in the center of the place, encircle the potatoes with tomatoes, and add your salmon on top. Then, as a last tip, pour a little vinaigrette on top.
